There are other vegetables to enjoy in the morning beyond spinach and kale, however. Here is one of my favorite quick start breakfasts. It's fast, nutritious, delicious, and oh so easy! There is no excuse not to get your veggies and protein in the morning :)
- 1-2 omega 3 rich egg - cook in pan over medium/low heat
- 1/2 - 1 cup chopped raw veggies (broccoli, snap peas, carrots, cauliflower all work well here)
- 1/4 cup salsa of choice
- 1 tsp veganaise, plain yogurt or sour cream (you can use Beanaise or Cashew Yogurt if you are unable to eat the others due to allergies)
- 1 small clove garlic, pressed
This only took me 3 minutes to cook, so I know it's fast! You can add more vegetables if you like. Leftover vegetables can be utilized for this method as well. Enjoy your veggies :)
