Some nights you just need to make something quick, and for those nights, I recommend this short cut recipe to create a hearty Bison Black Bean Chili. Of course, my preference would be all fresh herbs, and chopping my own tomatillos and chillies, but not every day allows for that much kitchen time, and that is where some quick helpers come in very handy. This recipe is gluten free, dairy free, and soy free, depending on the pre packaged products you buy. Check labels carefully for allergens.
Ingredients:
- 1lb Bison or other pasture raised beef, ground
- 1 medium onion, diced
- 6 large stalks of organic celery, cleaned and chopped
- 5 large organic carrots, peeled and chopped
- 1 can diced organic tomatoes (with or without spices)
- 1 can organic black beans (with or without spices)
- 32 oz box of natural beef stock + 12 oz water
- 1 Cup salsa verde (spicy, for our taste preference)
- 1/2 tsp garlic powder
- 1/2 Tablespoon dried parsley
- Louisiana Hot Sauce optional - to taste
In large pot, brown meat. Cook onions while meat is browning. Add all ingredients, and bring to a boil. Reduce to simmer and let cook until vegetables are tender.
