Ingredients:
- 8oz mushrooms, sliced and cleaned
- 1 medium onion, sliced
- 1.25 lb steak, sliced thin
- salt and pepper
- 4 Tablespoons earth balance butter
- 1 teaspoon dijon mustard
- 2/3 Cup Toffuti Sour Cream (dairy free)
- Method: Saute onions until tender. Add mushrooms and cook for 4 minutes over medium heat. Add mustard, stir. Add steak. Sprinkle with salt and pepper. Stir until brown on both sides. Reduce heat to low and add sour cream. Cook 5 minutes and serve with gluten free noodles. I used Spectrum noodles for this dish, and they were delightful. They are made with a mix of potato and soy in addition to the standard rice. The texture is fantastic. Serve with veggies of choice.
