Nicoise Salad is one of my favorite lunches on the go. It's an easy one dish meal that you can prepare in larger batches for quick lunches or suppers. Typically you serve this salad with fish, but today we opted to use the eggs as our only protein. This is a simplified version from some, but the end result was still good. We served this with roasted garlic spread on gluten free bread. Yum!
Ingredients: (4 servings)
- 5 hard boiled eggs, peeled and sliced
- 4 medium organic potatoes, boiled, cooled, sliced
- 6oz green beans, cooked and cooled
- 2 medium tomatoes, sliced
- salad greens of choice
- dressing: I used a ready made olive oil and vinegar dressing, and then added 1 tsp Dijon mustard and 2 tsp honey. I mixed it well. It would be easy to make your own oil and wine vinegar dressing for this as well.
- Optional - olives
Lay lettuce on plates, then add potatoes, green beans, tomatoes. Drizzle with dressing, paying attention to potatoes and making sure they get a nice coating. Top with eggs and optional olives. Enjoy! For a weekend lunch, we make a double serving and use the rest as a side salad with fish, for supper.
