A friend of mine suggested this recipe and I gave it a try today. The result was so yummy! I was thinking "granola bar", but what I got was more "candy bar". I followed the recipe, for the most part, but I did use half raw pecans with my raw almonds. Also, I used natural unsweetened peanut butter instead of almond butter, because that is what I had on hand. This may have changed the moisture content because my bars don't look like Elana's. Mine are almost impossible to cut into bars because the bottom is too moist and it wants to fall apart. The top is too thick and hard to cut nicely. Next time I would cut the coconut oil in half and add a tablespoon of coconut oil to my chocolate, but I wouldn't mess with the ratio of nuts. They are so good! The amount of sweetener and salt was perfect for my family. Another winner from a great blogger! We love Elana's recipes :) Check it out, here.
